Matthew "Mat" Eickhoff
February 10, 1985 – May 26, 2023
Mat Eickhoff, 38, passed away May 26, 2023 at his home in Minneapolis. He was born February 10, 1985, in St. Cloud, MN, to Tom and Sue (Ruether) Eickhoff. Mat attended Cathedral High School and the University of St. Thomas, graduating with a degree in accounting. Professionally, Mat worked several accounting jobs, including a position at Buffalo Wild Wings’ corporate office where he designed and managed a system for efficiently recognizing revenue generated from home deliveries.
Mat was curious, adventurous, fearless, and possessed an unrelenting-pursuit of knowledge and understanding of people and concepts. He read and listened with intensity and thoughtfulness, asked questions, rarely accepting “just because” or “because I said so” as an explanation. His roaring, infectious laugh was a staple of conversation. If a topic or a life event was important to Mat’s friends and family, it was important to him. These traits also gave Mat a level of stubbornness that was sometimes difficult to appreciate. It was difficult for him to accept advice or receive help.
Mat had many passions, and high on the list was pool. He enjoyed the challenge of visualizing the angles required to make the perfect shot. Mat’s loved ones will forever miss his smile, his laugh, his wit, his hugs.
Mat is survived by his dad Tom, sister Jennifer, daughter Madelyn, aunts, uncles, cousins, their spouses, and his dog Mowgli. He was preceded in death by his mom and grandparents. Jennifer and Tom want to extend a heartfelt thank you to Mat’s friends. We are forever grateful.
There will be a root beer float gathering from 4-7 pm at Cathedral High School on June 10, 2023. Please come, stay awhile, reconnect, reminisce, and honor the Mat we all loved. It’s summer so please dress comfortably.
Memorials are preferred to Cathedral High School and Inspire and Flourish Dog Rescue (Maple Grove, Minnesota).

I knew Matt through his Cathedral classmates at St. John’s University. He visited often and I got to know him. I admired Matt for his analytic mind and for his independence in life and thought. I had not seen Matt in several years, but I will always remember him, his roaring laugh, and I will miss him dearly.
I remember Mat’s laugh resounding through the halls at CHS. The words: curious, adventurous, and fearless describe him so well. These traits were the catalyst for many of those laughs he shared with his friends as they ventured through life. Mat was also very respectful in his quest for answers about faith- not accepting “ just because”, but he truly sought out the reasoning behind faith. He genuinely listened in the conversations we shared. Tom and Jennifer-our prayers are with you. Mat now has all the answers and can rest in peace.
This news is absolutely heart-breaking. Mat was such a wonderful guy, and it saddens me to think of him struggling. My thoughts and prayers go out to Tom, Jennifer, Madelyn and family.
My deepest condolences to Uncle Tom, Jenna and family. Mat was such a fun, kind and loving person to be around. I will always remember our conversations and his infectious laugh. He will be dearly missed. Rest in peace. Love Danny
